Pickled Eggplant
This afternoon, I peeled an eggplant, cut it in thin slices, put the slices in boiling white vinegar, added some oil and spices and made these:
Pickled Eggplant!
It is a recipe from my Mom. You'll have to trust me on this one - a ham sandwhich is so much yummier with pickled eggplant piled on top of the ham. Beats mustard any day.

Your pictures bring back memories of me standing on a chair in my great grandmother's kitchen watching her as she pickled vegetables and made jams and preserves. I hated fig preserve day, for some reason I hated the smell of figs.

I *love* eggplant! Love, love, love it. My favourite dish in the whole wide world is eggplant parmigiana. Yum!
